Spicy Roasted Chicken

1 whole chicken – wash and pat dry with a paper towel
1 jalapeno – diced
2 long hot pepper – diced
1 medium red onion – diced
salt 1 tbsp or to taste
juice of half a lemon
1 tsp crushed black pepper
2 cloves of garlic
1 tsp onion powder
1/2 tsp of red chili flakes
2 tbsp of cold butter

Method

Preheat the oven to 400 deg F
Grate the garlic and mix it with butter, 1/4 tsp of black pepper and 14 tsp of onion powder – keep it aside
Add all the diced peppers, onions, red chili flakes, lemon juice, salt n black pepper in a bowl and mix well, keep it aside
Sprinkle salt, pepper and onion powder inside the chicken before stuffing it, making sure its well coated inside
Use 3/4 of the diced mix peppers and stuff the chicken.
Tie the legs of the chicken (trussing) using a string
Stuff the butter mixture underneath the skin of the breast of the chicken
Sprinkle generous amount of salt, pepper and onion powder all around the chicken
Layer a baking tray with aluminum foil and put the chicken on it (breast side up)
Bake for app 1 hr
Grind the left over pepper mix to a paste and add app 1 tbsp of dark soy sauce and mix well
Take the chicken out of the over after 50 mins and brush the chicken with the soy sauce mix and with some of the oils from the tray
Put it back in the oven for another 10 mins
Take it out of the oven and let it rest for 10 mins before serving

Serve Hot
