1 Potato – peeled and grated and then washed
1 can jack fruit – thinly sliced
1 medium onion – thinly sliced
4 garlic cloves – chopped
4 chilies – chopped
3 tsp cooking oil
1 tsp cumin seeds
1/2 tsp mustard seeds
salt to taste
a few curry leaves
METHOD
Add oil into a non stick pan,
Add cumin,mustard, and curry leaves and let it pop
then add sliced onions and stir for app 1 minute until it becomes translucent
Add chopped garlic and chilies and stir for app 30 seconds
Add app 3/4 tsp turmeric powder,then add potatoes, jack fruit and salt to taste cook for app 5 mins while constantly stirring,
Cover and cook for another 20 minutes (stir occasionally)or until the jack fruit is tender.
SERVE HOT WITH ROTI
