Aaloo Paratha

Machachi For the dough
2 cups all purpose flour
3/4 cup hot water
3 tbsp oil

For the potato stuffing
4 medium potatoes
3 green chilies – minced
1/4 tsp cumin seeds
1/2 tsp turmeric powder
1/2 tsp coriander powder
1/4 tsp garam masala powder
1/2 tsp red chili powder or flakes
salt to taste
water for boiling potatoes

METHOD

To make the dough
Mix flour and oil well, add a little bit of water at a time and make a soft dough

To make the stuffing
Boil the potatoes – peel and mash
Add all the ingredients into the mashed potatoes and mix well
Add a little bit of water if needed to make it smooth

To make the parathas
Divide the dough into even portions (each paratha will require 2 thin rotis)
Roll out one roti and evenly spread the potato stuffing on it, cover it with another rolled out roti just like a sandwich
Pinch the sides to seal both rotis, cook on both sides on low flame while lightly brushing the parathas with ghee or butter on both sides

Serve hot or with raita and curry
