Chili Chicken

2 chicken breasts – cubed
1 egg
2 tsp corn starch
1 small onion – sliced
8 green chilies
2 inch ginger – peeled and thinly sliced
2 tbsp hot sauce
3 tbsp soy sauce
1 tsp red chili flakes
1 bunch mint – chopped
1 tsp garam masala
1 tsp cumin
1 sprig curry leaves
2 tsp mango powder (or lemon juice)
1/4 cup cooking oil

Method

Wash and dry chicken cubes with a paper towel
Add corn starch to the chicken and mix well making sure all the pieces are well coated
Add Salt and chili flakes and mix well
Add 1 egg and mix well and set it aside
Heat oil in a non stick fry pan and fry the chicken for a few minutes in a single layer until they are golden brown – Drain and keep aside
When the chicken is all fried, toss the oil and add some fresh oil in the same fry pan, heat the oil on medium to high heat
Add curry leaves, cumin, onion and ginger and give it a good toss for 30 seconds then add sliced green chilies and toss for another 30 seconds
Add soy sauce, hot sauce and mango powder, garam masala and fried chicken, toss well for 1 minute
Garnish with Mint

Serve hot along with Tea
