Papaya Curry

1 green papaya – peeled and chopped into little pieces – you can also grate it or pulse it in a mini chopper
1 sprig of curry leaves
2 tbsp cooking oil
1 small onion – thinly sliced
3 garlic gloves – crushed
3 red chilies – sliced into halves
1 tsp cumin seeds
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
3/4 tsp turmeric
1/2 tsp garam masala powder
1 tsp coriander powder
1 tsp baking powder
1 tsp red chili flakes
1 tbsp mango powder
salt to taste
METHOD

Heat oil in a non stick pan on medium heat
Add curry leaves, cumin, mustard seeds and fenugreek seeds and let it pop in hot oil for app 30 secs
Add onions, and stir fry until they get translucent, Add sliced chilies and garlic and stir fry for another minute
Add chopped papaya and toss well
Add turmeric, garam masala, coriander powder and mango powder and salt and mix well
Cover and cook on medium to low flame for app 10 minutes while tossing occasionally so it doesn’t burn
Add baking powder and mix well, cook until the papaya is well cooked

Serve Hot With Roti
