10 pieces chicken
1 big potato -peeled and cubed
1 small onion – sliced
3 tsb cooking oil
1 1/2 inch cinamon stick
4 cardamom pods
5 cloves
5 garlic cloves – crushed
1 tbs ginger – crushed
3 red chilies – crushed
1 sprig curry leaves
1 tsp cumin seeds
1/2 tsp mustard seeds
1 tsp coriander powder
1 tsp garam masala powder
1/2 tsp turmeric powder
1/2 tsp jafna special roasted curry powder
1 tbs tomato paste
2 + 1/4 cups water
salt to taste
chopped cilantro for garnish

Yuncheng METHOD

In a pan, heat oil on medium flame
Add cumin, mustard seeds, curry leaves and let it pop for 30 secs
Add cinnamon, cardamom pods and cloves and stir for 30 secs
Add onions,stir fry until light golden brown
Add crushed ginger,garlic,chilies and stir fry until brown
Add coriander powder,garam masala, turmeric, and roasted curry powder and stir for 1 minute
Add about 1/4 cup water and cook until the water evaporates and oil separates)
Add tomato paste and cook for 1 minute
Add chicken and salt and mix well until all the masala is well coated
Add about 2 cups water to the chicken and bring it to a boil
Cover and cook for 15 minutes
Add potatoes and cook for app 30 minutes or until the potatoes are tender and the chicken is done.
Add chopped cilantro for garnish

SERVE WITH RICE
