1 carrot – peeled and sliced into thin strips
Ginger – peeled and sliced into think strips
chilies – sliced
6 cloves of fresh garlic
1 dried red chili
1/2 ts whole black pepper corns
1 tsp cumin seeds
1 tsp coriander powder
1 tsp garam masala powder
1 sprig curry leaves
4 tbsp oil
1/2 tsp of mangrel seeds (optional)
Salt to taste
METHOD
Put all the sliced veggies in a bowl
Using a mortar and pestle,coarsely crush together black pepper corns and cumin seeds, salt and garlic
Add curry leaves, dried red chili, garam masala and coriander powder with crushed garlic paste and mix well
In a non stick fry pan, add oil and warm up the masala paste for a few mins
pour the warm masala into the veggies and mix well
Serve with Daal and Rice or with your favorite curry
