Kung Pao Chicken

1 lb Boneless chicken – marinated in 1 tsp corn starch and 1 tsp granulated garlic salt
(I used meat from chicken drumsticks as its more tender and juicy)
1 small onion – chopped
4 green onions – thinly sliced and save some (about 1 inch long)for garnish
1 inch ginger – chopped
4 dried red chilies – chopped
1/4 cup roasted peanuts
2 green chilies – chopped
3 tbs cooking oil
1 red bell pepper – diced
1 packet Lee Kum Kee Kung Pao chicken sauce (196 ml)

Add oil into a nonstick fry pan on high flame
Add marinated chicken and stir fry for app 8 mins – set aside
In the same fry pan add ginger, onions,bell pepper, chilies, finely chopped green onions and peanuts and stir fry for app 5 mins
Add Lee Kum Kee kung pao chicken sauce and stir for app 2 mins or until the sauce starts to bubble
Add Chicken and let it cook on slow heat for app 1 min
Garnish with green onions and green chilies
Serve Hot with Rice
