Chicken Salad Wrap in Spinach Tortilla


1/2 cup Boneless chicken (from drumsticks)
1 tbs olive oil
1/2 tsp paprika
1/2 tsp chili flakes
black pepper
1 tsp light soy sauce
fresh mint leaves – finely chopped
Sea Salt to taste
2 baby bocchoy cut in half
2 tsp salad dressing of your choice
Greens of your choice
Fresh spinach leaves for a wonderful contrast
Head lettuce for lighter contrast
Red onions & Tomatoes for a blast of color.
Spinach Tortilla


Marinate the boneless chicken with the first 7 ingredients and saute in a non stick pan on high heat – set aside
Saute the bocchoy until it wilts – set aside
turn the heat off and in the same pan, warm up the tortillas
Add Greens, bocchoy and cooked chicken
Add salad dressing

Wrap & Serve
