Dates and Nuts energy bites

1/4 cup peanuts – chopped
1/4 cup dried mango – chopped
1/4 cup pepitas – pumpkin seeds
1/4 cup cranberries – chopped
1/4 cup pistachios – chopped
1 cup of seedless dates – chopped
2 tbsp of butter
3 tbs unsweetened coconut flakes –
1/4 tsp of cardamom and ginger powder – optional

METHOD

In a non stick pan, heat butter on medium flame
Add dates and stir until they get heated evenly
Add all the chopped nuts and fruits and mix well
Add cardamom,ginger powder and mix well
Turn the stove off and let it slightly cool
Make it into a log shape and then square off the sides
Roll in it the coconut flakes so all the sides are covered
Leave it in the refrigerator for app 15 mins and then cut it in squares

TIPS

Add a few drops of red food coloring to the coconut flakes and mix well for a pink color
You can use nuts and dried fruits of your choice – slices almonds,raisins,dried pineapples,crystallized ginger, oats etc
slightly grease your hands/work surface before handling the dates
