2 Crabs-cleaned,cut, cracked (soak in juice of 1/2 a lemon)
1 med Onion – sliced
1 tsp Cumin,1/4 tsp Mustard seeds
5 tbsp Ginger Garlic Chili(fresh) crushed
2 sprigs Curry leaves
4 Cardamoms
4 Cloves
3 small pieces Cinnamon
3 Tbs cooking oil
1/2 tsp Jafna Special Roasted Curry powder
2 tsp Coriander & cumin powder
1 tsp garam masala powder
1 tsp paprika
salt to taste
1/2 can of coconut milk
Cilantro for Garnish
METHOD
In a pan heat oil on med heat
Add cumin,mustard seeds
Add Onion and saute till light brown
Add ginger garlic, chili paste, saute for 3 mins or till slightly brown
Add all the masala and give it a good stir for a minute
Add 1/4 cup water turn the heat to simmer and let the masala steam cook with the lid on for about 5 mins or till the water dries up and the oil separates from the masala.
Add the crab and cook on med low heat for 10 mins
Add 1 1/2 cupd water and cook on low to med flame until 10 mins
Add coconut milk and cook for another 5 mins
Simmer and cook until the sauce consistency desired.
Add cilantro for garnish
SERVE HOT WITH STEAMED RICE
