Pulao – The Best Thing That Ever Happened To Rice!
I remember my mother telling me once on the way to a Hindu wedding, “Do not look for meat in the pulao”
To this day I do not have the traditional pulao masala recipe. The kind of pulao you would get in a Muslim wedding. Growing up I remember in my brothers wedding, the cook came and he gave a list of ingredients and I wrote it down, went shopping with my Abba, In fact that was the first time I learnt the names of ingredients. The ladies cleaned and pounded all the ingredients to a fine powder full of divine fragrance. Later the cook came and he mixed up a perfect combination of pulao magic. That was the best pulao I had ever tasted. I wish I had an iPhone back then, I would click pictures or even make a video every step of the way.
I have tried to replicate the taste of the traditional Fiji Pulao Masala but I know I have a long ways to go. In today’s dish I have used the next best that was available to me. PUNJAS PULAO MASALA
It came out pretty good, so will settle with this for now, but my search continues for the traditional Fiji Pulao Masala.
