2 lbs chicken giblets
3 tbs cooking oil
1 tsp cumin seeds
1 medium onion – chopped
1 sprig curry leaf
6 garlic cloves- crushed
2 tbs ginger – crushed
5 red chilies – crushed
1 tbs tomato paste
1/2 tsp garam masala powder(optional)
salt to taste
Cilantro for garnish
METHOD
Heat oil in a non stick pan on medium flame
Add curry leaves and cumin seeds and stir for 30 secs
Add 1/2 of chopped onions and stir until light golden brown
Add half of ginger,garlic and chili and stir until brown
Add salt and tomato paste and stir for 1 minute
Add chicken Giblets and stir until the meat is well coated
cover and cook on medium to low flame until meat is tender
Turn the flame to high and add left over onions,ginger,garlic and chili and stir well
Sprinkle garam masala powder and add chopped cilantro and and stir until well mixed.
SERVE HOT
