INGREDIENTS
2 pieces Salmon fillets
salt to taste
1/2 tsp cracked black pepper
1/2 tsp chili flakes
1 tbs crushed ginger
juice of half of lemon
few sprigs of fresh thyme and rosemary
2 tbsp of butter (4 square pieces)
1 tsp of olive oil
1 small tomato
1 small onion – thick slices
METHOD
(Preheat the oven at 380 deg Fahreinheit
Wash and pat dry the salmon fillets
Line a baking tray with aluminum foil and lightly grease with olive oil
Arrange thyme and rosemary sprigs in a single layer and the lay the fillets on top of it
Add lemon juice evenly on the salmon pieces
Sprinkle salt, pepper and chili flakes and crushed ginger on the salmon pieces
Add sliced lemon, onion and tomato to the baking tray
Add chunks of butter on top of the salmon
Cover the tray with another aluminum foil and seal properly so the steam doesn’t escape
Bake for app 30 mins @ 380 deg F
Green Mint Salsa
1/2 cup fresh mint leaves
1/2 cup English cucumber with peel
1 jalapeno or 3 green chilies
salt to taste
Put everything in a mini chopper and pulse it a few times
Serve Hot with topped with Green Salsa and a fresh lemon wedge on the side
