INGREDIENTS
1 piece Salmon Filet
Salt & Pepper to taste
2 tsp lemon Juice
1/4 tsp Chili flakes
1 tbs melted butter
METHOD
Preheat oven to 375 deg
Wash and dry salmon with a paper towel
Spray the baking dish with no stick spray
Put fish in a baking dish
Season with salt pepper, chili flakes,lemon juice and melted butter
Cover the fish (inside of the baking dish) with wax paper and cover the dish with foil paper
Bake for 25 mins
SALAD
1 small red onion – diced
1/2 cup cooked Quinoa
1/4 cup parsley – chopped
1/4 cup green onions – chopped
1/4 cup garbanzo beans
1 red tomato – diced
1/2 cup cucumber – diced
splash of lemon juice
Toss everything in a bowl and add a splash of lemon juice
Serve hot with Quinoa salad
