2 cups sugar
1 can of coconut milk
3 cups flour
1 tsp baking soda
2 tsp baking powder
1/2 tsp vanilla essence
butter for greasing pot
1 tbsp cocoa powder
METHOD
Coconut sugar syrup
Add sugar in a small pot and heat it on low to medium flame until the sugar melts
Remove the pot from the flame (preferably put in the sink to avoid spatters)
Add coconut milk – whisk to remove lumps
Bring the pot back on the stove heat it on low to medium flame and cook while constantly stiring for 5 minutes making sure there are no lumps
Remove from the flame and let it cool and set it aside
Pudding Batter
Combine baking soda, baking powder, cocoa powder and flour.
Mix the flour ( a little bit at a time) with the cooled syrup and make a batter (almost to the same consistency of pancake batter – you might not use all the flour mixture)
Add vanilla essence and mix well
Grease a pot with butter.
Add the batter into the greased pot
Cover the pot and place it in the steamer
Steam for approximately 1 1/2 hrs or until done (insert a toothpick n if it comes out clean then its done)
SERVE WITH BUTTER OR NUTELLA
