2 cups pasta
1/2 can red kidney beans
1 stalk of celery – diced
2 tbsp ginger – chopped
1 cup mixed vegetables
1 cup spinach – chopped
1 tbsp red chili flakes
5 cups water
salt and pepper to taste
olive oil
– FOR SAUCE
1 can pasta sauce – I used Hunts roasted garlic n herb
1 tsp rosemary – chopped
1 tsp thyme – chopped
1 jalapeno – diced
3 tbsp ginger – diced
1 small onion diced
METHOD
Add water in a pot and bring it to a boil
Add 1 tsp salt, pepper, fresh herbs and 1 tbs oil and turn the heat to medium low and let it simmer for 1 minute
Add pasta and let it cook until its 75% done
Add red kidney beans and cook until pasta is done making sure its not over cooked
Drain and set aside
In a non stick pan, heat oil on medium high flame
Add ginger,celery and chili flakes and stir for app 1 minute
Add mixed vegetables and stir fry for another minute
Add pasta and spinach and cook on high for app 2 minutes until well incorporated but avoid over cooking
For Sauce
Add all the ingredients in a pot and warm it up.
Serve Hot over Pasta
