Raita

INGREDIENTS1-raita

2 cup plain yogurt (Greek yogurt or sour cream works well for a thicker consistency)
2 fresh scallions – chopped
3 tbs cilantro – chopped
1 cucumber – peeled, de seeded and grated
2 green chilies – finely chopped
1 thumb-sized ginger root
1 garlic clove
10 black pepper corns
2 tsp cumin seeds
salt to taste

METHOD

Add grated cucumber, cilantro, chilies and scallions to the yogurt
Add Puree ginger and garlic, and mix well.
Dry roast the cumin until its a little smokey,
Grind the roasted cumin with black pepper corns and combine well with the raita
Add salt to taste

SERVE WITH SPICY CURRY
