Assorted veggies- washed and cut into bite size pieces
Salt and pepper to taste,
1 tbsp olive oil
Method:
Heat a large non stick skillet on high heat
Arrange veggies in a single layer and let it brown for a 8 mins,
Remove them from the pan, keep it aside, reduce heat to med high,
Add olive oil in the same pan and add green leafy veggies,
Stir fry until they wilt a bit,
Add the rest of the veggies and toss well,
Add salt and pepper to taste.
Serve as a side dish or a healthy compliment to baked salmon
